Fried Chicken
Crispy fried chicken that's worth the time.

Ingredients

  • (3-4lbs) Chicken, pieces
  • (2 cups) Milk
  • (2 tablespoons) Lemon Juice
  • (2 cups) Flour
  • (2 tsp) Garlic Powder
  • (1 tsp) Paprika
  • (1/4 tsp) Cayenne
  • (4 tsp) Baking Powder
  • (1/2 tsp) Baking Soda
  • (1 Tbsp) Salt
  • (1 tsp) Pepper
  • (3-4 cups) Oil or Fat for frying
  • (1) Egg

Directions

Add the oil to a dutch oven and heat over medium-high until it reaches 375*F

2.Whisk the milk and lemon juice together and set aside to thicken.

3. In a medium bowl whisk together the flour, salt, pepper, garlic powder, paprika, cayenne, and 2 tsp of the baking powder.

4. Separate the drumsticks, thighs, and cut the chicken breasts into 2-3 pieces each. Even better, debone the chicken and flatten slightly with a mallet

5. Add the egg to the milk mixture and whisk, then add the remaining baking powder and baking soda. it should start to froth up a bit. 

6. Starting with half of the chicken pieces and using a set of tongs, dredge in the flour, then coat with the egg mixture letting any excess drip off, then return to the dredge. Set aside and repeat with the remaining half of the chicken pieces. 

7. Once the oil is hot add the chicken pieces one at a time. Cook for 7-10 minutes, or 4-5 if deboned and flattened. Adjust the heat as necessary to keep the temperature above 325*F. Flip and cook for 5-6 minutes longer, until golden, slightly brown, and crispy. Remove and set aside on paper towel or wire rack. Get the oil back up to temperature and repeat with remaining chicken pieces.
