How to Spatchcock a Chicken

Flattening out a chicken is a great way to cook it in less time, helps all your seasonings stay put, and takes very little effort.

1. Place the chicken breast side down on a cutting board and using a pair of kitchen shears make a cut up each side of the backbone, cutting through the ribs and joints at the legs and wings. Remove it and clean any liver or kidneys that remain on the inside of the chicken.
2. Flip the chicken over and fold the breasts towards you to make it lay flat. You might need to crack the breast bone to help, but not always. That's it, now its ready for the grill, smoker, or oven.
