Simple Baked Side Ribs
No fancy tricks or ingredients, just a bit of rosemary, salt, pepper and a bit of time to let them melt into the juices of these slowly cooked pasture-raised pork side ribs. These can be cooked from frozen, just add an extra half hour. Serves 2 but if you're like me you'll regret not making extra.

Ingredients

  • (1 Pkg.) Pork Side Ribs
  • (1 or 2) Rosemary Sprigs - Fresh
  • Salt
  • Pepper

Directions

1. Preheat oven to 350*F and adjust oven rack to middle position.

2. Lay a piece of tinfoil on a cutting board, big enough to make an envelope around the ribs laying side by side. On top of that place a similar sized piece of parchment paper. Lay the ribs meat side down and season with last and pepper. Flip over, season more, and lay one or two sprigs of fresh rosemary on top. Fold the parchment paper over top so the ribs are well sealed to contain the juices and steam. Do the same with the tinfoil.

3. Transfer to a baking sheet bake for 2 1/2 hours. Remove from the the package and let them rest for a few minutes before cutting up to serve. You can add a sauce to the ribs if you wish, but give them a taste first if you think you do, you'll probably change your mind.
