Grilled Side Pork Sandwich
Grilled side pork on a crusty bun beats the pants of regular barbecue fare, and if you really want something special go the extra little step and add some smokiness with real wood. Maple or Apple is fantastic here. You need either a charcoal grill or minimum three burner barbecue to make this work.

Ingredients

  • (1 to 1.5 lbs) Side Pork
  • (to taste) Salt and Pepper
  • (1/2 cup) Barbecue Sauce
  • Wood Chips or Chunks (optional)

Directions

For Charcoal:

Light charcoal or briquets, once ready arrange "double bank" style, with a pile on each side of the grill and the middle open, leaving the middle open for a sheet of tinfoil or aluminum pan to catch drippings. Place chunks or soaked wood chips on charcoal, open all vents on the grill and put the lid on to get hot.

For Gas:

Turn two outside burners to medium high. Place soaked wood chips in foil with holes punched in it or an aluminum pan and place over one of the burners. Close the grill and let it preheat for ten minutes.

1. Season side pork with salt and pepper and when the grill is hot lay out strips so they're in the indirect area of heat. Grill for 10 minutes, covered, checking occasionally and moving a bit if needed to help evenly cook.

2. Flip over and add a coating of your favourite bbq sauce. Grill for 6 or 7 minutes, covered again. Flip, add a bit more sauce and let it caramelize a bit and soak up a bit more of the smokiness. 

3. Serve on a bun! I tried a few different toppings and loved it most with mayonnaise, bread and butter pickles, thin slices of Oka cheese, some spicy arugula, and a bit more bbq sauce.
