Easy Baked Chicken

The easiest and simplest way to cook a whole chicken, and get all the skin nice and crispy.

Ingredients
- Chicken - whole (frozen)
- Salt and Pepper
- Fresh Herbs
Directions
1. Preheat oven to 400*F and adjust oven rack to middle position.
2. Spatchcock the chicken by removing the backbone and flattening out.
3. Line a rimmed baking sheet with parchment paper and lay the chicken on it breast side up. Season with salt and pepper and chopped fresh herbs. Rosemary is a good simple addition. Place in the oven and bake for 45 minutes to 1 hour, depending on the size of the chicken. Its done when the legs are loose and the skin on the breast has started to brown.
